Recipe: Whole Wheat Veggie Paratha
Ingredients:
- 2 cups Aashirvaad Shudh Chakki Atta
- 1 cup mixed vegetables (carrots, peas, potatoes, spinach) - finely chopped or grated
- 1 small onion, finely chopped
- 1-2 green chilies, finely chopped
- 1 tsp ginger-garlic paste
- 1/2 tsp cumin seeds
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
- 1/2 tsp garam masala
- Salt to taste
- Fresh coriander leaves, chopped
- Water, as needed
- Oil or ghee for cooking
Instructions:
1. Prepare the Dough:
- In a large mixing bowl, combine the Aashirvaad Shudh Chakki Atta with a pinch of salt.
- Gradually add water and knead to form a smooth, soft dough. Cover and let it rest for 15-20 minutes.
2. Prepare the Filling:
- Heat a little oil in a pan, add cumin seeds, and let them splutter.
- Add chopped onions and sauté until translucent.
- Add ginger-garlic paste and sauté for another minute.
- Add the mixed vegetables, turmeric powder, red chili powder, garam masala, and salt.
- Cook until the vegetables are tender. Add fresh coriander leaves and mix well. Let the filling cool.
3. Assemble the Paratha:
- Divide the dough into equal-sized balls.
- Roll out each ball into a small circle, place a spoonful of the vegetable filling in the center, and fold the edges to seal.

- Heat a tawa or flat pan on medium heat.
